Whether you're coming off a late night or just craving something bold and balanced, our Hangover Chicken Salad delivers. It’s fresh-from-the-grill comfort—marinated chicken, sweet summer vegetables, pillowy cheese tortellini, and sun-dried tomatoes—all tossed in a hand-blended vinaigrette that wakes up the palate and satisfies the soul.

This is a salad worth lingering over, preferably with good bread and chilled wine in hand.
Ingredients
The Salad
2 boneless, skinless chicken breasts (butterflied and marinated overnight in Italian dressing)
1 red bell pepper, diced
1 yellow bell pepper, diced
1 sweet onion, chopped into chunks
1 (9 oz) package fresh cheese tortellini
1 jar sun-dried tomatoes in oil with herbs, cut into quarters
Optional: 1 small jicama, peeled and cubed (for crunch)
The Vinaigrette ( family receipe! )
6 tbsp extra virgin olive oil
4 tbsp white wine vinegar
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tbsp grainy German mustard
2 cloves garlic, chopped
Salt & cracked pepper to taste
Pro tip: Blend the dressing with a handheld blender for 30–60 seconds for a velvety finish that clings to every bite.
Method
Grill the Chicken: Marinate chicken overnight, then grill at 350–375°F for 8 minutes per side until golden and cooked through. Let rest, then slice into bite-sized pieces.
Roast the Veggies: Toss peppers and onion in olive oil, season generously, then wrap in foil. Grill for 20–30 minutes until tender and slightly charred.

Bring it Together: In a large serving bowl, combine grilled chicken, roasted veggies,
tortellini, and sun-dried tomatoes. Add jicama if using.
Dress & Toss: Pour the vinaigrette over the salad and stir generously to coat. Serve warm or chilled—it’s delicious either way.
Serve with crusty bread and a glass of white wine.
