Butter, garlic, and bubbly create a silky sauce that pairs beautifully with sweet lobster, tender shrimp, and al dente pasta. Ingredients


  • 2–4 small lobster tails, meat removed and chopped

  • 8–10 large shrimp, peeled and deveined (optional addition)

  • 2 cloves garlic, finely diced

  • 1 cup champagne (or prosecco or dry white wine)

  • 1 stick (or more) unsalted butter

  •  A handful of fresh parsley, chopped

  • Salt & freshly ground black pepper

  •  12 oz linguini or pasta of choice


Instructions

1.   Cook the Pasta - Bring a large pot of salted water to a boil and cook your pasta until just al dente. Reserve 1 cup of pasta water before draining.


2.    Build the Sauce - In a large sauté pan, melt butter over medium heat until sizzling. Add the garlic and cook for no more than 1 minute—just until fragrant.


3.   Add the Champagne - Pour in the champagne and let it bubble for a minute or two to reduce slightly and deepen in flavor.


4.   Cook the Seafood - Add chopped lobster meat (and shrimp, if using), then reduce heat to a gentle simmer. Cook just until the seafood is opaque and tender—about 2 to 3 minutes. Be careful not to overcook.


5.    Bring It All Together - Toss in the drained pasta and stir to coat in the luscious sauce. If the mixture feels dry, add a bit of reserved pasta water until it reaches your desired consistency.


6. Finish & Serve - Turn off the heat, add a final pat of butter, sprinkle with parsley, and season to taste with salt and pepper. Serve immediately with crusty bread and a chilled glass of bubbly.
