Ingredients
½ cup fresh dill
½ cup fresh mint
½ cup fresh parsley
⅓ cup fresh basil
2 garlic cloves
2 scallions (white + green parts)
1½ tbsp fresh lemon juice
Pinch of kosher salt
½ cup extra virgin olive oil ( check out Lake Norman Olive and Vine)
½ cup crumbled feta cheese ( check out Ashe County Cheese )
½ cup Greek yogurt
Optional: ¼ cup mayonnaise (for extra creaminess)
Instructions
Add herbs, garlic, scallions, lemon juice, and salt to a food processor. Blend until finely chopped.
Slowly drizzle in olive oil while blending until smooth.
Add feta and blend, then pulse in Greek yogurt until creamy.
Taste, adjust, and serve immediately or chill.
